CREAMY ASPARAGUS: Vidalia onion, shiitake mushroom, Gruyere, and bacon gratin topped with sourdough-almond gremolata

SUNCHOKE BISQUE: with black pepper and fennel goat cheese cream

FRIED SMELTS: with baby arugula salad in roast shallot-dill dressing

Second Course

1/2 POUND SHRIMP: with sautéed spinach, chili roasted fingerlings, and cilantro-lime butter sauce

SAUTEED SKATE: wing with Shagbark Mills grits, asparagus, lemon-caper butter sauce, and micro green salad

PAN-ROASTED, BRAISED VEAL CHEEKS: on portobello ravioli with natural reduction sauce and warm snap pea, roasted leek, tomato, and shiitake mushroom salad
